The best Champagne we have ever tasted. It is hard to put this review into words.

Aromas of dominant yellow fruits, yellow plums, mature Norwegian pears, cantaloupe and melon.

The wine had a surprisingly delicate and shy autolysis touch. some notes of yeast, white bread, dough and croissants, but the more dominant flavour was the delightful golden fruit. The most ripe golden fruit imaginable, like being stranded at sea for weeks, and at last getting washed ashore at some tropical island to be greeted by luscious tropical golden fruits. Nectar of the gods. Delicious notes of persimmon, lychee, ripe citrus, ripe pineapple, white flowers, and sweet citrus.

Such a wonderful wine. An elegant refreshing acidity, the wine strikes a excellent balance between youthful & playful and ripe & complex. The bubbles feel like caviar eggs popping in your mouth exploding with flavour, but still elegant, light, and creamy.

When referring to Napoleons famous quote about champagne, “In victory, you deserve it. In defeat, you need it.” I imagine he was referring to Salon, anything else would be disappointing.
