Preuve, French for evidence, was one of 3 wines included in the Spring 2020 Wine Club shipment. This wine was bottled without any dosage, with less atmospheric pressure (a gentler secondary fermentation to produce fewer bubbles, and therefore a more vinous mousse), and disgorged after 4⁠ years on the lees.⁠ The wine is made with the solera method and includes vintages from 2012, 2013, 2014, and 2015.

The wine offers aromas of red and yellow apples, rhubarb, rose petals, white flowers, red gooseberries, citrus, as well as some buttery notes. The flavor profile continues where the nose left off, with cold butter, pastry, and some subtle oakiness. Green apples, peaches, white currant, apricots. Some very light funky notes.

Medium acidity, ok concentration but lacking some “oumph” to kick it up a notch. Light bubbles, delicate mousse, good length and mouthfeel, dry finish. An overall good wine, but it feels like its holding back something.
