Chateau Pavie
What an unique wine!
The wine as a super complex nose, this is the kind of wine where you can just smell it for hours and still pick up new aromas. Aromas of raspberry, dark cherries, wet asphalt, eucalyptus, elderberries, coffee, dark chocolate, burnt bread crust, summer rain, anise, tobacco, menthol and caramel
Its sad a that the wine does not follow up the massive expectation from the super complex nose. The first thing we noticed was the very dominant tannin structure that somewhat overshadows the flavours of the wine. The concentration and the high acidity makes the intense tannin structure more approachable. One of the reasons why the tannins are so pronounced is the decision not to filter out the sediments before bottling. This is very unique and gives the wine an extraordinary ageing potential. Whit all that said the wine has flavours of raspberry, dark cherries, dark plums, cherries, cassis, anise, tobacco, dark chocolate and burnt wood.
